1/4 cup melted butter
1 cup milk
1 egg, slightly beaten
1/4 cup of castor sugar
2 cups Self-raising flour
1 teaspoon of Baking Powder
2 drops vanilla essence
Pinch of salt
1 can of blueberries, drained
Preheat oven to 220 degrees celsius.
Combine the butter, milk, egg and vanilla in a bowl and mix gently. Add the sugar, sifted flour and baking powder and mix using no more than twelve strokes. Add the blueberries and stir four times only. Spoon into a greased muffin tin and bake in preheated oven for 18 minutes.
Delicious served warm with a small dollop of cream and your favourite cuppa. Enjoy.
